1.) I like to cut the eggplant in chunks and saute it with one clove of garlic,

1/2 onion sliced and just before it's done add a tablespoon of soy sauce and a

dash of teriyaki sauce and eat over rice, couscous or in the center of mashed

potatoes.

 

2.) I also cut the eggplant in long slices and use as lasagna noodles and make

lasagna with it.

I love eggplant and will send more recipes asap............Donna

Cool, thanks so much! There's certain veggies, like

the eggplant, that have made it so much easier to

transition to vegetarian.

 

There's a dish I always get at the Indian buffet that

I love! I always forget to check the name of it when

they have it available. My best friend, who is Indian,

hates eggplant with a passion so doesn't have any

family recipes for eggplant. (Though she has given me

great ones for sambhar and dals)

 

I'm finding I like it in Asian styles much more than

Italian style (bad Italian me!).
