Guest guest Posted April 25, 2005 Report Share Posted April 25, 2005 i like eggplant fixed anyway!!! but a favorite at my house is the following: pierce eggplant and either bake or bbque till very very soft ...scoop out the inners...and mash very well ...till a pulp..do not puree in blender..you want some bulk to this. add to the eggplant ( for 2 eggplants)....1 finely diced onion....4 tablespoons lemon juice... 2 tablespoons olive oil... and about 1 tsp of sugar or less ....salt and pepper. serve with tomato wedges and some nice rye bread or crackers.
