If you don't fancy Bacos or any other type of soy bacon flavored bits, i think this recipe could hold up without them. i only put them in there because the magazine where i found the recipe used real bacon and i thought it might need something similar. Next time i am skipping the bits and adding chopped water chestnuts instead. Curried Couscous Salad 3/4 cup water 1/2 cup uncooked couscous 1 cup frozen peas, thawed 1 medium diced cucumber 1 large carrot, shredded 2 green onions, chopped 1 tsp parsley 1/4 cup soy Bacos [fake bacon bits] Dressing: 1/4 cup olive oil 1 Tbs. cider vinegar 1 Tbs. soy sauce 1 tsp. sucanat [or sugar] 1 tsp. curry powder In a small saucepan, bring water to a boil. Stir in couscous. Cover and remove pan from the heat; let stand for 5 minutes. Fluff with a fork. In a large bowl, combine the couscous, peas, cucumber, carrot, onions and parsley. Cover and refrigerate until chilled. In a jar with a tight-fitting lid, combine the dressing ingredients; shake well. Just before serving drizzle over salad and add the Bacos. Toss to combine.
