Guest guest Posted April 18, 2005 Report Share Posted April 18, 2005 " Corn & Black Bean Summer Salsa " 2 fresh ears of corn roasted, steamed or boiled 11/2 cups canned black beans drained 1/2 onion chopped 1/4 cup red, orange or green bell pepper chopped 3-4 tablpns fresh lime juice 1-2 jalapeno or serrano peppers minced 1/4 cup chopped fresh cilantro 1 garlic clove minced 1 sm. tomato chopped 1 tsp. oilve oil salt to taste Cut corn kernels off cobs and place in bowl.
