Guest guest Posted April 17, 2005 Report Share Posted April 17, 2005 I served these for lunch today. Very tasty and there;s one leftover for my lunch tomorrow unless I eat it tonight. Italian Eggplant Croquettes " 1 large or 2 small eggplants peeled and cubed 1/2 cup grated sharp cheddar (I used rice cheese and it worked fine) 1/2 cup Italian seasoned dry breadcrumbs 1 egg beaten 1/4 tbspns. chopped onion 1 garlic clove minced 1 tblspn. fresh basil chopped or 1/2 tablspn. dried salt & pepper to taste In 2 qt. sauce pan fill 1/2 way with water and bring to boil. Add cubed eggplant and boil until tender 4-5 minutes. Drain and mash. After you mash eggplant pour excess water off. Place eggplant in bowl and add remaining ingredients. Mix and if too wet add a little more breadcrumbs. Shape into patties and fry in a small amount of oilve or canola oil until browned on both sides.
