Guest guest Posted April 16, 2005 Report Share Posted April 16, 2005 Potato Freaks, try this: Its a Pesach (Passover) goodie. :^) Potato Kugel 6 medium baking potatoes, peeled (about 4 pounds) 1 large onion, peeled 2 large eggs 1 teaspoon salt or to taste 8 tablespoons margarine or butter (dairy-free if you need it to be parve), melted 2 tablespoons matzah meal Preheat to 400° F. Cook in upper 1/3 of oven. Kugel: Grate the potatoes and onion... drain well. Whisk eggs, salt, 6 Tbsp melted margarine, and matzah meal. Stir in potatoes well. Bake: Place 2 melted tablespoons butter (or margarine) in a 9 x 13-inch baking dish. Coat evenly. Pour potato mixture over that melted butter, spreading evenly. Bake, starting at the pre-set 400°, uncovered, for 15 minutes. Then, reduce oven temperature to 375° F. and continue baking for 45 more minutes. The top should look crispy. Cut into squares.
