Guest guest
This is my all time comfort samdwich.......... " Potato and Olive Sandwich " (open face sandwich) I large russet potato 1/3 cup sliced black olives 1 large tomato sliced 2 slices sourdough bread vegan mayo or regular mayo balsamic vinegar salt & pepper olive oil Peel and slice potato into rounds. Boil slices until almost fork tender. Only takes a few minutes. Drain and let them cool down a little Heat a little olive oil in skillet and fry potatoes until golden brown on both sides. Salt and drain on paper towels. Toast bread and spread with mayo. Stack potato slices, olives and tomato on both slices of bread. Drizzle a ittle balsamic vinegar over top and sprinkle with pepper. Make sure you have someone there to eat the other one or you will eat them both. Yum!!!!! " The afternoon knows what the morning never suspected. " Old Swedish proverb.
