Potato and Olive sandwich(recipe post can be vegan )

This is my all time comfort samdwich..........

 

" Potato and Olive Sandwich " (open face sandwich)

 

I large russet potato

1/3 cup sliced black olives

1 large tomato sliced

2 slices sourdough bread

vegan mayo or regular mayo

balsamic vinegar

salt & pepper

olive oil

 

Peel and slice potato into rounds.

Boil slices until almost fork tender. Only takes a few minutes.

Drain and let them cool down a little

Heat a little olive oil in skillet and fry potatoes until golden brown on both

sides.

Salt and drain on paper towels.

Toast bread and spread with mayo.

Stack potato slices, olives and tomato on both slices of bread.

Drizzle a ittle balsamic vinegar over top and sprinkle with pepper.

 

Make sure you have someone there to eat the other one or you will eat them both.

Yum!!!!!

Thank you so much for this unique sandwich idea! I must try it! Potato

and black olives are comfort food to me too!

Hiya Donna. That is the strangest and yet yummiest sounding sandwich

I've ever heard of. Nothing could possibly be bad with those

ingredients! :)
