Hi Jen,

Welcome into the group. I usually cut a recipe in half and take the leftovers

to work the next day. Or I will steam veggies and eat them as a side dish and

then make a small casserole with the balance the next day. I have a cookbook at

home called single vegetarian or cooking for two, something like that. I will

have to email the book title over, I'm at work right now...................

You could make your own frozen dinners for busy days

with your leftovers!
