Guest guest
Hi Jen, Welcome into the group. I usually cut a recipe in half and take the leftovers to work the next day. Or I will steam veggies and eat them as a side dish and then make a small casserole with the balance the next day. I have a cookbook at home called single vegetarian or cooking for two, something like that. I will have to email the book title over, I'm at work right now................... I am 25 and tried a few times to go completely vegetarian. Those times were when I lived with my parents (who eat meat) during my college years and high school. I've been living on my own for about 4 years now and a few months ago decided to try again, since now I control what I eat. There are a few meat items I have had an especially hard time cutting out. But I am willing to wean myself off these slowly. Anyway, I live by myself with my 2 cats, no roommate or SO, and I find that lots of the recipes are scaled to feed a family of 4. Does anyone else in the group live by themselves and have experience cooking vegetarian for one person? What challenges/experiences have you had? Guest guest
You could make your own frozen dinners for busy days with your leftovers!
