" Peacock Vegetables " 2 red onions cut into eigths 2 small yellow squash cut into 1/2 inch strips 1 sweet red pepper cut into 1/2 inch strips 1 sweet yellow pepper cut into 1/2 strips 1 green pepper cut into 1/2 inch strips 4 cloves of garlic thinly sliced 2 tsp. fresh parsley or cilantro minced 1 tsp. balsamic vinegar 1 tsp. olive oil 1 tsp. dried oregano 1/4 tsp salt 1/4 tsp black pepper Preheat oven to 425 degrees Place first 7 ingredients in bowl. Combine parsley or cilantro and next 5 ingredients in a jar and shake. Pour over vegetables and toss. Spoon vegetables in an ungreased 13 X 9 baking dish and bake 20 minutes, stirring every 5 minutes. Serve warm or even room temp. " The afternoon knows what the morning never suspected.
