Guest guest Posted April 15, 2005 Report Share Posted April 15, 2005 hi julie, welcome! that's great that your son is so open to new foods and veggies! lucky you. there are some fake meat products out there that seem too much like the real thing. veggie hot dogs, veggie breakfast sausages, veggie burgers, veggie meatballs, veggie pepperoni, etc..... i don't eat too many of these products, but my husband likes some of the morning star farms stuff (chik patties, veggie dogs, breakfast strips)and the boca sausages. he has been known to grumble about other foods i make. lol. he can't/won't cook, so if he has a problem, he knows where the peanut butter and bread are! what are some of your favorite dishes? hope you enjoy this list...it's wonderful, susie --- " Julie J. I don't know if the meat and potatoes husband will eat them, but it will at least give me something to suggest. I enjoy mushrooms, spicy foods and anything chocolate! My son's favorites are cheese dip, macaroni and cheese, fruit in every shape and size and celery with peanut putter and raisins. Here's a recipe for stuffed mushrooms that I really love! 4 ounces cream cheese 8 ounces Pepper Jack cheese 1/2 cup seasoned breadcrumbs a lot of mushrooms, maybe a pound or so, 2 " or bigger, smaller ones for an appetizer or large ones for a main dish Melt the cheeses together in the microwave Stir in the breadcrumbs. The texture should be slightly sticky, but not gooey. Add more breadcrumbs if necessary. Place on a lightly oiled cookie sheet and bake until the mushrooms are soft, about 15 minutes. This recipe is super fast and easy. Here's another one that I really like too. 1 can of vegetarian refried beans 8 ounces of pepper jack cheese tortilla chips or wheat crackers Melt the cheese in the microwave. Add the beans. Heat and stir occasionally until the mixture is heated throughout. Use as a dip for chips or crackers. This one is also super easy and quick.
