Guest guest Posted April 14, 2005 Report Share Posted April 14, 2005 Celeriac, or celery root, is another one of those " strange " root thingys that people tend to shy away from. It does have a taste of celery, but is very versitile and can substitute or be added to many things. I've used it a couple of ways. I've peeled, boiled and mashed it, in place of mashed potatoes. And I've also cooked it along with potatoes to give the mashed potatoes a little surprise flavor. Here is one website that I found some good info for you, just when I Googled " celery root. I did make an error once and grab horsereadish instead since they have the same appearance but a different shape, I thought it was just a skinny celeriac and wrecked the soup.
