I mail them to my pal in Prince of Wales, Alaska (population 250) all the time....: " Best Peanut Butter Cookies " 1/2 cup butter, shortening or margarine (softened) 1/2 cup sugar 1/2 packed brown sugar 1/2 peanut butter (creamy or crunchy) 1 egg 1/2 tsp vanilla extract 1 1/4 cups all purpose flour 1/2 tsp baking soda 1/2 tsp baking powder Preheat oven to 350 degrees. In mixing bowl, cream butter and sugars. Add peanut butter, egg and vanilla and mix until smooth. Combine flour, baking soda and baking powder, add to creamed mixture and mix well. Shape dough into one inch balls and place 2 inches apart on ungreased cookie sheets. Flatten each ball by crisscrossing with the tines of a fork. Bake 8-10 minutes or until bottoms are lightly browned and cookies are set. " The afternoon knows what the morning never suspected. " Old Swedish proverb.
