Guest guest Posted April 13, 2005 Report Share Posted April 13, 2005 hi josie, welcome to the group! this is an amazing group of people and i hope you enjoy it here. it can be hard to figure out what to eat at first. the longer you follow the veggie diet, the more you will realize that there is so much you can eat. it might also help if you try to vegetarianize favorite dishes. take the meat out and replace with tofu, analogs, beans, mushrooms, or other vegetables. i'm not sure if you are trying to go vegan (no diary or eggs) but here's a few ideas for meals..... breakfast: pancakes (i had strawberry pecan pancakes on sun.) eggs (scrambled, fried, poached, omlettes, migas) hot cereals (oatmeal, multigrain, etc...) cold cereals with milk or soy milk quick breads and muffins lunch: soups salads wraps with hummus and fresh veggies veggie dogs dinner: indian dishes pasta dishes stir frys veggie burgers eggplant parmesan veggie lasagna quiches cheese enchiladas we also have a wonderful collection of tried and true vegetarian recipes from our memebers in our files section. take a look and i'm sure you will find something. here's a link: /files hope this gives you some ideas. glad to have you here, susie --- Josie <kitchen_tymes wrote: > > Hello, > > My name is Josie and for years have been yo yo-ing > trying to go > strictly veggie.
