How to Use KohlrabiMore Healthy Food Solutions

Excerpted from Rolling Prairie Cookbook, by Nancy O'Connor.

Kohlrabi can be one of those intimidating vegetables if you haven't been around

it much. It has the look of an organic green Sputnik, with a taste like fresh,

crunchy broccoli stems accented by radish. The name kohlrabi comes from the

German kohl, meaning cabbage, and rabi, or turnip, and that kind of sums it up.

 

 

Hi Mel and Jenni, Actually they are bunched together in the produce area like

fresh beets. I always cut the tops off and peel off the outer layer then they

are ready to prepare.

 

Here is one recipe so far:

 

Stir Fried Kohlrabi

 

2 cups kohlrabi peeled and diced

 

1 jalapeno pepper chopped (optional)

 

4 leeks washed and chopped (white bottom part)

 

2 sweet banana peppers cut in slices.

 

Heat skillet with one tablespoon of oil on medium high. Stir fry above

ingredients until tender about 8-10 minutes and serve.

 

I will search for a few more recipes I have made. You can also grate the fresh

kohlrabi in with your coleslaw recipe or grate it into your green salad. I also

cut into julienne pieces and stir fry with my broccoli stems for an added treat.

It's quite a nice change of flavor. I find the smaller bulbs are more tender and

the flavor much better. There's usually 4-5 to a bunch. The tops are edible

but I have never used them. I imagine they would be good in a soup. I shall

Does sound good Donna - the kids love trying a " new " vegetable, we'll

look forward to it in a stir fry!
