Pineapple Cookies 1 cup shortening (I use Crisco vegetable shortening) 1 cup brown sugar 1 cup white sugar 1 cup crushed pineapple, drained 1 tsp. vanilla 2 eggs 1/2 tsp salt 1/2 tsp baking soda 2 tsp baking powder 4 cups flour Prerheat over to 350 degrees. Mix the flour, salt, baking soda and baking powder together in a medium bowl and set aside. In large bowl cream shortening and both sugars until fluffy. Then add eggs, pineapple and vanilla and mix until blended. Now slowly mix the dry ingredients into the creamed mixture. Drop by rounded teaspoons onto lightly greased cookie sheets. Press lightly to flatten out with a cookie press, back of fork or the palm of your hand. Bake 10-12 minutes and remove to wire rack to cool. Texture of this cookie is soft in center and almost cake like with a pineapple flavor. " The afternoon knows what the morning never suspected. " Old Swedish proverb.
