One kind is a semi-thick red sauce that's made from spicy chili peppers, it has the heat like tobasco (but better flavor) and the thickness like a watered down ketchup (but not too runny). One brand that I can think of is called Red Rooster (I think, at least I know it has a red rooster on it's label) Another chili sauce, which we use alot, is a sweet/hot gelatinous style liquid with chili pepper pieces and seeds. The kind we get usually has vietnamese written on it, so not sure what the brand name is. Look in the asian areas of your grocery stores or go to an asian market.
