" Barley Casserole " 1/2 cup barley 1 tblsp olive or canola oil 1 1/2 cups water 1 veggie bouillon cube 1/4 tsp salt 1/2 cup sliced green onions 1/2 cup sliced mushrooms * optional add favorite spices and a crushed clove of garlic Preheat over to 350 degrees Saute barley in oil until golden brown. Stir in water, bouillon cube, salt, green onions, and mushrooms, and bring to a boil. Transfer to casserole dish, cover and bake 40-50 minutes or until barley is tender.
