I became a lacto/uovo/pesco vegetarian about 5 years ago and lived that way for 3 years. My husband reintroduce meat to the family two years ago (he was the one who began our fairly meatless lifestyle!) and I've regretted it ever since. I have therefore reintroduced meatless living and feel so much better for it. He still cooks meat, which is fine for him, but I keep it meatless for my kids and myself with a bit of fish every now and then. We do try to keep the dairy to minimum as well. I love to cook and enjoy recreating formerly carniverous meals with a meatless flair. I do use many frozen substitutes in my culinary inventions and love to try other substitutes as well (Trader Joe's soy cheese is faboo). I have found (for me anyway) that taking the meat out of the picture actually increased my meal planning options rather than decreasing them!
