She has extra time on her hands and is now be able to do all her baking and share her luscious treats with customers. I gave her my full book of postage stamps and a self addressed envelope since she was kind enough to send me this recipe on a day off. These are the best and I've eaten a lot of cookies in my day. Hope you enjoy! Love, Donna LEMON SNOWCAP COOKIES 1/2 stick softened butter 1 cup sugar 1 tsp. lemon extract 1 tbsp grated lemon peel 1 3/4 cups flour 2 tsp baking powder 1 cup coconut 1 cup macadamia pieces 2 eggs (I use large) (powered sugar to roll cookies in) Preheat over to 350 degrees Cream butter and sugar. Add lemon peel, eggs and extract. Stir in flour and baking powder. Add nuts and coconut. Shape into 1 1/2 inch balls. Roll in powdered sugar and place on greased cookie sheet. Bake for 18 minutes or until the edges are set.
