Guest guest Posted February 27, 2005 Report Share Posted February 27, 2005 I know i am somewhat strange, but i try strange things, i.e. When i cut into an Eggplant i smell Banana ! & recently looked up the Nutritional Value of Eggplant, and it is basically about the same as - - of course - a banana - - so 1) purchase some plump ( 2 to 4+ ) Purple Eggplant, Diced 2) get some good Yellow Bananas ( 1 for each Eggplant ), Diced 3) All into a " Pressure Cooker " with only about half - 1 Cup water bring up to normal pressure, cook only a few to 7 Minutes, then COOL Cooker open, pour into large bowl, and add Half or more of a can of " Libbys - Easy Pumpkin Pie Mix " & stir well it adds touch of Sugar and Cinnomin; The last time i made it i added some Whole Wheat Flour, to thicken the water, to the consistancey of a pudding and one time i put into Blender, to make it smooth; to your choice. Withour Blender it is purple in color, but with blender it turns green / logical the Yellow & Blue makes green. If you're diabetic leave out the Pie Mix, and substitute other indgredients. Please : Someone write back, on your opinion, of how you like it. And any suggestions on a good :-) application for it, like as a pudding, pie, or ? ? ? Thanks, DE / i will eat it all in an evening, or two, that's a lot of Eggplant from a differant concept, p.s. the only thing i'd heard, was that the Aboriginies of Austrailia, us it for its' effect on their skin.
