It is, however, baked, needs preparation time, and uses dairy. * * * * * Layered Mushroom Casserole 8 slices buttered bread cut in fourths 1 lb fresh mushrooms coarsly sliced, sauted in butter 1 med. chopped onion ½ cup chopped celery ½ cup chopped green pepper ½ cup mayonnaise 3/4 tsp salt ½ tsp pepper 2 eggs 1 1/3 cups milk 1 can cream of mushroom soup Parmesan cheese Place ½ of the bread on the bottom of a 7½ x 10 " baking pan, buttered side down Make a mixture of the rest of the above and spread it over the bread. Put the rest of the bread on top of the mixture. Take 2 slightly beated eggs and mix with the milk. Pour over top layer of bread. Cover tightly with aluminum foil and refrigerate over night. Just before baking, spread one can undiluted cream of mushroom soup over the top. Sprinkle with parmesan cheese. Bake in 300° oven for 60-70 min. ===== " The cat did not respond.
