Spinach Salad Recipe

I figured I'd post this since I mentioned it in my Vegetarian Chili

recipe. I like to serve them together, along with corn bread.

 

Spinach Salad

(serves 2-3 people)

 

1 small red onion (or 1/2 a large one)

1 orange

1 crisp apple

1 medium avocado (optional)

 

baby spinach leaves, washed and dried. (If I'm using pre-packaged

baby spinach, I use about 1/2 a bag.)

 

toasted walnuts

 

2-3 Tbsp each of olive oil and orange juice, whisked together or

shaken together in a jar. Add salt and pepper to it to taste.

 

Peel the onion and slice it into rings.

Peel the orange, cut into quarters, then slice them into

approximately 1/2-inch pieces.

Peel and core the apple. Slice into eighths then slice into 1/2-inch

pieces.

Peel and dice the avocado if using. I use about a 1/2-inch dice.

 

Put the onion, orange, apple, and avocado in a bowl and toss with

the dressing. Chill if you have time. If not, continue with the next

step.

 

Before serving, toss the spinach leaves with the marinated

ingredients and top with the toasted walnuts.
