Guest guest Posted February 6, 2005 Report Share Posted February 6, 2005 I happen to be a fan of tofu, too, though I pretty much liked it from the beginning. Made a tasty sort of Pad Thai inspired dish the other night I thought y'all might be interested in. 1 package tofu, drained and diced 1 package rice noodles, soaked in hot water 15-20 minutes 3-4 green onions. diced 1 clove garlic, minced red pepper flakes to taste Thai peanut sauce (I used San-J, which I think is vegan if I read the label right) sprouts (should be bean but I used a combo of radish and clover because that's what they had at the store and I didn't have time to make my own) cilantro to taste (there should be peanuts on it, too, but I didn't have any. Of course any other veggies would be great to add: carrots, pea pods, peppers, etc.) Fry the tofu in a small amount of oil (I used some grapeseed and some peanut) until lightly browned. Add onions and garlic and saute until the onions are limp and the tofu is a little more browned. I added the red pepper flakes at this point. Drain the noodles, but leave a little water on them (or add a little extra water) to deglaze the pan. Add as much of the peanut sauce as you need to make it as saucy as you like (the noodles will suck up a lot) and cook for a few minutes until the noodles are al dente. Serve with sprouts, cilantro, peanuts, etc. on top. Hubby added siracha, but I found it hot enough just with red pepper flakes. Have a good day! Sarah W. The all-new My – What will yours do?
