Guest guest Posted February 4, 2005 Report Share Posted February 4, 2005 Rice and Lentils Quick and easy dinner. 2 ½ cups water ½ cup white rice ½ cup lentils 2 tbsp butter or olive oil chopped onion spices (2 tsp curry powder, for example) Stir together then simmer 20 minutes covered. For variation, add some tomatoes or garlic. Spinach Soup This is our favorite soup. It’s also adapted from Tassajara Recipe Book. 2 yellow onions 2 big cloves garlic 3 tablespoons nutritional yeast ½ teaspoon salt olive oil good amount of spinach (2 bunches) parmesan and smoked gouda salt and white pepper Chop up the onion and sauté until translucent. Add the garlic, nutritional yeast, and salt, and continue sautéing for a few minutes. Meanwhile, have chopped and washed spinach ready. Add the spinach to the pot. Cover to steam until the spinach is wilted, uncovering and stirring occasionally. Add two cups of boiling water. Simmer until the spinach is tender (about ½ hour). Add grated cheese (about ½ cup, or more if you want). Stir until cheese is completely melted and incorporated. Serve with white pepper and salt. ===== Be here now.
