Thai Vegan Recipe for Pumpkin for Maria Chanda

LOL I thought the same thing..........hey did you get the squash info? I

wasn't sure my email would show for you in a spam folder or not since I'm not on

Vegan Kalabasa Flan

 

 

 

 

 

 

 

Ingredients

 

 

2 cups kalabasa or pumpkin, cubed

Egg substitute equal to three eggs

1 cup Almond milk or soy milk (use brand that does not have carnogenan as an

ingredient)

1/2 teaspoon fresh grated lime peel

 

1/2 teaspoon pure vanilla extract

Brown Rice syrup

 

 

 

 

Directions

Steam the pumpkin pieces. When soft mash or puree in a food processor till

smooth and free of 'lumps'.

 

 

 

Add all ingredients except sugar. Strain.

 

 

 

On the empty stainless steel or pottery style mold (not aluminum) rub the inside

with the Brown Rice Syrup. Place the squash mixture into the mold and steam for

about 20 minutes.

omg yes I got it!! thanks so much. I have over 100 emails here to go through and

reply to, most I haven't opened yet, but I opened that one! LOL. In fact I am

gonna make some tonight.

On the Thai sauce thing, I found out the curry paste I use does not contain any

fish! Most curry pastes contain shrimp paste, but not this one, so next time I

make it I will measure. I should make it within the next two weeks. I never

m,easure, I just dump stuff into stuff ya know?

I'm the same so it's a little hard to write out a recipe sometimes. I

appreciate the sauce recipe when you have free time to write it.
