I am particularly wanting to use wheat bran and applesauce. Does anyone have a recipe using these items? I did find some recipes but they all call for buttermilk, which I'd rather not use (so fattening!). Any ideas would be great. Guest guest Posted January 19, 2005 Report Share Posted January 19, 2005 This is from my Vegetarian Times cookbook - I have not tried it, but it sounds kind of good. Fruity Bran Muffins makes 12 1 1/4 cups whole wheat flour 1/2 cup oat bran 1/4 cup wheat bran 2 tsp baking powder 1 Tbs veg oil 1/4 cup honey 1 whole egg (or 2 egg whites), beaten 2/3 cup skim or soymilk 1/2 cup unsweetened applesauce 1/2 tsp vanilla extract 2 medium ripe bananas, mashed Preheat oven to 350. Grease muffin tins. Stir together dry ingredients & set aside. In a bowl, combine oil and honey. Whisk in the egg, milk, applesauce & vanilla. Combine dry and wet ingredients until just blended. Gently fold bananas into batter. Spoon batter into muffin tins and bake muffins until just begin to brown, about 20 to 30 minutes. Serve warm. Guest guest Posted January 19, 2005 Report Share Posted January 19, 2005 Here is one my grandpa really liked MMMMM----- Recipe via Meal-Master v8.06 by AccuChef www.AccuChef.com Title: Applesauce Oat Bran Muffins Yield: 12 Servings 1 c All purpose flour 1 c Oat bran 1/4 c brown sugar,Packed 4 t Baking powder 1 t cinnamon or pumpkin Pie spice 1/2 c applesauce,Unsweetened 1/2 c Water 1/4 c Vegetable oil 2 egg whites,Large Place flour, oat bran, brown sugar, baking powder, and cinnamon or pumpkin pie spice in bowl and mix well at low speed. In a separate bowl combine the applesauce, water, oil, and egg whites and beat with a fork to blend. Add applesauce mixture to flour mixture and mix at medium speed only until all flour is moistened. Grease muffin tins with margarine or line with paper cups. Fill muffin tins 1/2 full and bake at 400 F for about 20 minutes, or until muffins are browned and spring back when touched in the center.
