I had an uncle like that. He had the insulin down to a science and knew how much

to take per how many sugars he had. he ate everything junky. He died from

something totally different at 59 years old, so I can't say the diet killed him.

I wonder how long he would have lived on that diet. OB BY THE WAY!!!!! Check

this out!! my mom, the one who calls all vegetarians " whackos " well, she started

watching this show " Christina Cooks " and she called me up telling me how

wonderful all these recipes look and that I should make her some! and that you

don't need meat for these yummy looking recipes, and she wants me to fix some of

this stuff up and we can do lunch! LOL!

I watched Christina cooks and you can get her recipes at christinacooks.com.

Besides beinga vegetarian from the looks of the show I think she is also a

kitchen witch! yay! LOL.

type II diabetes & vegetarian

When my future father-in-law was diagnosed with type II, his team of

doctors were thrilled to discover that he would be receiving

vegetarian meals from us from time to time. We spoke with them about

the type of meals we prepare and they said they would be wonderful

for him to eat. Of course, I am not a doctor and would encourage you

to go over your diet with your diabetic doctor and/or physician so

that you know exactly what is right for you. Other than what we

prepare for him, my future father-in-law pretty much eats like a

teenager: fast food all the time, ice cream on a regular basis, etc.

I think, for him, the only thing that keeps him 'going' is his two

shots of insulin a day. His docs knew/know he will not control his

diet in any way.
