Since we're talking about Mexican Food (my favorite), I thought I'd introduce this " thing " I like to make at least once a week. I'm not a spectacular cook and during the week I like to make things that don't take a lot of time. This is my little enchilada/burrito combo. I also use canned foods here for convenience -- but I've made it using all natural ingredients too. I'm not a vegan so this includes dairy " Quick Enchiladurrito " (or Burritolada .. if you prefer ! :-) ) 1 flat burrito-size tortilla 1 8 oz can diced green chiles 1 16 oz can roasted tomatoes 1 cup vegetarian broth 1 1/2 cup brown rice 1 can black beans 1 tbsp olive oil Salt to taste Topping Enchilada sauce (or red mole sauce) Grated cheddar cheese sour cream and/or guacamole your favorite salsa In a large saucepan, mix the rice with a tablespoon of olive oil to soften for about one minute. (I've added onions here when I'm feeling a little more Julia Child-like) Add broth, chiles, tomatoes to rice mixture and stir. Cook until done -- usually about 15-20 minutes. Drain and stove cook black beans. Warm tortilla according to package directions. Place on a flat plate, add cooked rice and beans to your liking and roll tortilla into a burrito. Top with 1 tbsp enchilada sauce, cheddar cheese. I usually put it in the microwave for a minute or so, but the broiler works well too. Over melted cheese and heated sauce add sour cream and salsa.
