Hi,

 

Below is an easy recipe for cornbread using creamed corn. It has the

advantage of being fat-free, and is very good.

 

I have two requests for posters to the list. Firstly, when you respond to a

message, PLEASE delete any parts of the original message that aren't

relevant. Those of us who receive the digest have to wade through a lot of

extraneous text otherwise. Secondly, please change the subject line when

the subject has changed. So many of the " creamed corn " postings we've had

lately refer only to potatoes.

Cornbread (fatfree)

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

1 cup flour, whole-grain wheat

1 cup cornmeal

2 tablespoons sugar (or substitute)

2 teaspoons baking powder

1/2 teaspoon salt

2 egg whites

1 cup skim milk (or low-fat soy milk)

3/4 cup creamed corn

 

Mix dry ingredients. Mix wet ingredients. Mix together, just till blended.

Pur into sprayed 8 " x12 " pan. Bake about 20 minutes at 400 F.

calories from fat); 4g Protein; 22g Carbohydrate; 2g Dietary Fiber; trace

Non-Fat Milk; 0 Fat; 0 Other Carbohydrates.
