Guest guest
You can roast a red pepper and dice, add to a little spaghetti sauce with some chopped olives and corn, this makes a good baked potato topping. I don't know if I have an absolute favorite, but I like Mexican food a lot, and different kinds of rice and potato dishes. I've been in a soup cooking mood lately too ! A friend recently had a bbq and before he put the meat on, he cooked some portabella mushroom halves for me. It was great ! There is a chain restaurant locally called Mimi's that has a great veggie mushroom sandwich that doesn't get soggy on the bottom ! One thing I did recently for a group that I'm going to do again soon is a baked potato bar. I baked the potatoes ahead, since it was at someone else's house. As extras I had butter, sour cream, ranch dip, green onions ( couldn't find chives ), grated cheese, veggie chili, sunflower seeds, salsa, and veggie bacon bits. Easy for a mixed group too with meat eaters since you could also have meat chili and real bacon bits separately. Next time I'll probably add some cooked broccoli and some cheese sauce, besides the grated. If anyone has any other ideas that would be good, please let me know !
