Hi,

 

As requested here are a few low-cal brownie recipes to fill that longing for

chocolate. I have tried the first three. I have several more in my recipe

database, but these should get you started.

Fudgy Brownies

Amount Measure Ingredient -- Preparation Method

1/2 cup cocoa

3/4 cup flour

1 cup sugar

1/2 cup Splenda

2 egg whites

1/2 cup applesauce, unsweetened

1 teaspoon baking powder

1/4 teaspoon salt

1 teaspoon vanilla

1 tablespoon liqueur (chocolate, amaretto or coffee are good)

1 tablespoon peanut butter

 

Spray an 8 " x 8 " pan with vegetable cooking spray. In a medium bowl, mix

cocoa, flour, baking powder & salt.

 

Combine peanut butter with liqueur and warm in the microwave. It will be

kind of gluey.

 

In a large bowl, mix liqueur/peanut butter mixture with sugar. It will be

kind of crumbly and won't mix entirely.

 

Whisk in egg whites, applesauce & vanilla. Combine flour mixture with egg

mixture. Bake 35-40 minutes @350!

Banana-Brownies, Lo Cal

Amount Measure Ingredient -- Preparation Method

3/4 cup Flour -- all purpose

1/4 cup whole wheat flour

1/3 cup Cocoa -- unsweetened

1/4 cup Nonfat dry milk powder

1/4 teaspoon Baking soda

1/4 teaspoon Salt

1 large banana -- large ripe

2/3 cup Sugar

1/3 cup Splenda

2 large egg whites

1/4 cup nonfat yogurt

1 teaspoon Vanilla

 

Preheat oven 350F. Coat 9 in. square baking pan with vegetable cooking

spray. Combine flour, cocoa, milk powder, baking soda and salt in bowl.

Puree banana, sugar, egg whites, buttermilk and vanilla in food processor

until smooth. Add dry ingredients and pulse just until blended. Pour into

prepared pan. Bake 25 minutes or until toothpick comes out clean. Cut into

2 in. squares.

Healthy Brownies

Tofu

 

Amount Measure Ingredient -- Preparation Method

1 cup whole wheat pastry flour

1/3 cup cocoa powder

3/4 teaspoon baking soda

1/2 teaspoon salt

1/4 teaspoon cinnamon

1 10.5 oz package mori-nu Lite Tofu -- firm

3/4 cup sucanat

1 teaspoon vanilla

 

Stir the flour, cocoa, baking soda, salt, and cinnamon together in a large

mixing bowl.

 

Puree the tofu in a food processor until completely smooth, then blend in

the Sucanat and vanilla.

 

Preheat the oven to 350F. Add the tofu mixture to the dry ingredients and

stir just enough to mix. Spread into a nonstick or oil-sprayed 9 x 9-inch

pan and bake 20 to 25 minutes. The brownies should spring back when pressef

lightly in the center. Remove from the oven and allow to cool in the pan 10

minutes.

Combine dry ingredients. Combine wet ingredients. Combine wet and dry

ingredients. Pour into an 8x8 in pan sprayed lightly with nonstick cooking

spray. Bake at 325 F. for 23-25 min., or just until the edges are firm and

the center is set. COOL TO ROOM TEMPERATURE and cut into squares.

Double Chocolate Brownies ala Weight Watchers

2 Eggs

1/4 cup Sugar

2 tablespoons Chocolate liqueur

6 tablespoons Sifted cake flour

2 tablespoons Unsweetened cocoa -- sifted

1/4 teaspoon Baking soda

1/4 teaspoon Salt

1/4 teaspoon Baking powder

1 ounce Semisweet chocolate chips

1 ounce Chopped walnuts

 

1. Preheat oven to 350F. Spray an 8 x 8 x 2 cake pan with nonstick

spray and set aside.

 

2. In a medium mixing bowl, using an electric mixer on high speed,

beat eggs until custard-like consistency, about 4 minutes, until

doub- led in volume. Slowly add sugar, 1 tablespoon at a time,

beating well after each addition. Stir in liqueur.

 

3. In a small bowl, combine remaining ingredients except chocolate

chips. Add to egg mixture, stirring and folding just until combined.

Pour into cake pan and bake for 20 minutes, or until a toothpick

comes out clean from the center. Remove to wire rack and cool in the

pan.

 

4. In a small heat-proof measuring cup, combine the chocolate chips

and 1 tablespoon of water and melt over low heat stirring constantly

until smooth, about 30 seconds. Spread over cake with spatula. While

chocolate is still warm, sprinkle cake with walnuts.

 

5. Cut into 16 equal squares.

 

Each serving = 2 squares. Each serving provides: 1/4 fat; 1/4

protein; 1/4 bread; 65 calories.

 

VARIATION: Substitute 1 ounce peanut butter for the chocolate chips.
