Guest guest Posted January 5, 2005 Report Share Posted January 5, 2005 At 32, just before switching to a macrobiotic vegan diet, my veggies consisted of frozen peas,corn, tomatoes and french fries besides the veggies wedged between my Big Mac. I would eat a couple of english muffins sandwiches loaded with canadian bacon, eggs, and processed cheese just about every evening when I got home from work at midnight since my wife didn't cook for me. She wouldn't bother to wash the whole chicken she would serve to my sons so I didn't miss much. At six, my son refused to eat " anything with a face " so they were eating spagetti-o's until i found help. I remember saying as a child that I wouldn't eat rice since we ate white rice constantly when my parents had 7 kids at home. Boy, did I eat my words! I learned how to cook and mix flavors but didnt seem to find time when working 55 hrs per week in a stressful factory job. I created an unhealthy situation for myself physically besides constant stress as my wife and I broke up. In '85, my veggie diet caused me to go from 170 to 125 in a matter of months but eventually gained 10 lbs back which was abt right for my frame. I also came to appreciate how my body felt when I was eating balanced so I gained an appreciation for various vegetables besides grains. I would say that i didnt give veggies a chance since i balked at overcooked spinach from a can. I wanted to have muscles like Popeye but just couldnt stand the green glob that would appear on my plate. I enjoy raw spinach now and enjoyed a plate of chard with brown rice and hummus for lunch today... Since I didnt eat my veggies as a kid [except for carrot sticks and celery] it was more of a discovery to me when I starting eating them later in life. Also, I had not eaten brown rice until the end of 1984 when I hired a live-in nanny so the last 20 years have been a series of discovery for me and I am a better man for it.
