Guest guest
I found a recipe for the ravioli's in my vegetarian times cookbook. I don't know if this is the same one my friend uses, but it's a start. the filling: combine, 1 cup pumpkin puree, 1 cup cooked & mashed sweet potato, pinch nutmeg, dash salt & some white pepper to taste. 72 wonton wrappers, for " dough " use wonton wrappers on a floured surfce - mound 1 Tbs filling in the center of one, wet edges with water, place second wrapper over the first, pressing down around filling to expel any air. Seal edges, trim excess and transfer to dry towl. As you work turn the completed ravioli's occasionally so they dry on both sides. Boil them in batches of 8 - 12, until they rise to the surface and are tender, about 2 minutes. They have a cream sauce to serve them with - I like them just with butter. m
