Yes, cut it in large pieces and seed it. Yurn it upside down with a little

water in a large sauce pan with some karo sugar and cinnamon and let it boil

until it's soft when you pierce it with a fork. It will scoop out easily and

taste delicious.

Hey Melissa:)

 

You've just inspired me to cook the last of my fresh pumpkins this

morning and make pumpkin bread (vegan-style)!!! I bake mine - cut

them in half, place in a pan of water and bake at 375 degrees until

the flesh is soft. Then cool and scoop out the pulp for use in any

recipe. I'm going to look through all of my vegan cookbooks for a

recipe, but barring that, just use any pumpkin bread recipe and

substitute egg replacer for the eggs, nut or soy milk for the milk,

and " legal " sweeteners, flours, etc. It's easy to modify recipes:)

Hi Melissa -

 

We do much like Debra and make pancakes and breads, also cookies -

my recipes are all veggie not vegan, but subsitutions should be

pretty simple?

 

I also make a pumpkin soup - saute some onion (to your taste) just

till it is clear and soft, cube the pumpkin flesh, peel and chop

two potatoes - simmer all veggies in 4 - 6 cups of water or veggie

broth till they are tender (about 20 - 30 minutes). I season with

thyme and salt and white pepper - (nutmeg might be nice in place of

thyme?) - then I puree everything. You can thin the soup with milk

or sour cream...or swirl some sour cream (tofutti) in the bowl to

make it look snazzy!

 

My hubby loves pumpkin raviolis - but I've never made them. I have

a friend who does. You could experiment!

 

Make sure you toast those seeds - they are a favorite at our house -

and make a nice garnish if you choose, on the soup. If you don't

know how & /or want a neat sweet/spicey coating for toasted seeds let

me know.

 

Yum...pumpkin...hmm, I'm getting dinner ideas!!
