Hi Everyone:)

 

Well, I went and got creative after all of your wonderful suggestions earlier in

the week, and I wound up with this new creation that even my picky daughter said

was great! It's heating up now in the crockpot for our office party and

everyone is circling;)

 

Vegan Thai Nutballs with Spicy Peanut Sauce

 

 

 

1 c. sunflower seeds

 

1 c. cashews

 

1 c. hazelnuts

 

3 c. plain bread crumbs

 

¼ c. egg replacer powder dissolved in 2 c. water

 

2 tsp ground ginger

 

1 tsp garlic powder

 

½ tsp salt

 

¼ tsp black pepper

 

2 tbsp bottled spicy thai peanut sauce

 

 

 

canola oil for frying

 

 

 

Grind all nuts in blender - okay if some small pieces remain. Pour into a large

mixing bowl. Add bread crumbs, spices, and peanut sauce. Mix well. Gradually

add prepared egg replacer. Mixture should be dry/sticky to form 1 inch balls.

Fry nutballs in canola oil until all sides are toasty-tanJ Balls can be dipped

(fresh) or reheated in the peanut sauce if making the day before.

 

 

 

**if you want to add to the remaining peanut sauce for volume, add peanut

butter, chili sauce, and coconut milk to taste. Garnish with chopped green

onion tops or cilantro just before serving if desired.
