The foods that mimic the texture, appearance and to some extent the taste of meat. I understand that you can buy 'chops' and 'fillets' from the supermarket, although I never look in those display cases, preferring to eat vegetables without that extra art - with tofu or tempeh on occasion. Our local vegetarian Thai restaurant does a great line in analogs - fake duck, chicken, pork, fish, beef - and although that restaurant used to be my one exception to my 'no analogs' preference, I now find they are just a tad too realistic sometimes and go for the tofu dishes or the vegetables-only dishes. Overseas members may also remember the Bodhi restaurant in Sydney - they had absolutely wonderful vegetarian dim sum - probably still do - that had other restaurant chefs mystified, so realistic were they! It was a large-ish but scruffy place downtown above its own take-out shop, but everyone but *everyone* who enjoyed good veggie food could be found there! Nothing wrong with meat analogs, for those who enjoy them.
