Hi,

 

It must be a challenge to cook with only a microwave.

I am sure there are a lot of things you can do with a microwave

if you are inventive.

 

I have successfully cooked potatoes in the microwave when I've had to

and I have seen microwave egg cookers in the supermarket.

 

To cook four average potatoes in the microwave, I have done the

following.

Wash four potatoes and dry.

Pierce the potatoes all over with a fork.

Put the potatoes on an oven proof baking dish baking dish (never metal

in the microwave of course) and microwave on high for about 7 minutes.

Leave to rest a minute or so then turn over each potato.

Microwave again for about 8 minutes then let the potatoes rest again.

If the potatoes are smaller microwave for 7 minutes not 8.

If the potatoes are refrigerated, you may need 15 minutes in total.

If results vary with your microwave, make a mental note and slightly

increase or decrease the time next time.

 

You can use cooked potatoes in different ways.

 

You can cut a slot into them and add some sour cream, ground pepper (use

a pepper mill) and if you like a spicy taste add a few drops of tobasco

sauce.

 

You can cool the potatoes and add some chopped cooked egg/ or finely

chopped

apple or experiment with different veges that you can eat raw cut up

small

and make warm or cold potato salad. It is endless what you can do with

potatoes.

If you eat fish or such, you could layer some finely slices veges and

potatoes and fish or Layer veges fish cheese and microwaved egg

(chopped) - you may need an

egg cooker or try beating an egg and microwaving carefully in a cup.

 

You can also stuff potatoes (let cool, scoop out the middle and return

the middle

of the potato mashed roughly with some cheese or some finely diced or

sliced veges

or chopped up " Not bacon " and cook to heat through.
