I will try this asap. I love walnuts and I think the pecans would be a little

sweet but maybe now. thanks again........Donna

Re the potato salad with walnuts and apple.

One day I went into a small

supermarket and you could buy this potato salad by the container (they

filled up whatever sized container you wanted). I searched the internet

and the nearest description I could find was Waldorf Potato Salad.

So here is how I made my own and I believe you could also add a little

celery chopped very finely (but from experience, too much celery would

dominate the flavour of the salad). This is really delicious because the

walnuts and apples make the potato salad really tasty. Someone on the

internet

who hated walnuts substituted pecans but I can't say how that would

taste.

RE Waldorf Potato Salad

However many potatoes you need based on people

(I usually make more rather than less so there is some left overs)

3-4 potatoes peeled and diced then steamed

1 pkt of walnuts (say 1/4 to 1/2 a cup -chopped roughly)

I-2 Granny smith apples peeled, cored and diced into small pieces

(cubes)

(you could try leaving the skin on if you like because the pieces should

be small)

1 small stick of celery (no leaves, just the rib part) finely sliced

(optional)

Your favourite Mayonaise (the type you would prefer on potato salad).

Prepare potatoes and let them cool. Steam them till they are cooked but

still firm so you can toss them gently without the potatoes becoming

mushy.

Mix all ingredients together in a bowl and refrigerate till cold.

Serve in a lettuce leaf if you like on the side of each plate.

Some of the recipes on the internet added some raisins too so if you are

adventurous, you could add a handful of eating raisins.
