Yogurt Salad Dressing

This is quite simple.

2 cups of plain yogurt

Half a cucumber

 

Measure out the yogurt into a bowl. Cut the cucumber into bite size

pieces. Mix the 2 together and you have a dressing or topping for

your favorite dishes. It's great on salads. Especially good on

enchiladas.(better if made earlier in day and let sit a while)

this is similar to greek tzatziki - I think the greek version has

more going on... onions garlic, dill (maybe).

Even better if you mince some fresh mint and garlic and add to it.
