Guest guest Posted December 6, 2004 Report Share Posted December 6, 2004 experimental recipe that worked !! serves 4+, cooking time 40mins in a microwave. 2 tbs veg oil 1 large onion 4 cloves of garlic 1tsp fresh ginger (grated) 1tsp chilli powder 1tsp cumin powder 1tsp turmeric powder 1.5 cups of red lentils 2 pints of veg stock (marmite stock etc) Garnish- fresh coriander and lemon slices. place oil, garlic, ginger, chilli, cumin and turmeric in a large non- metalic bowl and cook on full power in microwave for 3 mins. When finished cooking, stir, and add stock and lentils, stir in well, cover and cook for another 40 mins. Check half way through and stir. When cooking has finished check for thickness, if not thick enough give it a bit more cooking time. If it is done, mash and garnish with fresh corriander and slices of lemon. Serve with rice of your choice, pita bread, chappatis, jacket potatoe etc. This recipe is based on a 550 watt microwave, adjust cooking times to manufacturers guidelines. If extra lentils are added to make it thicker, you can cool it in a fridge and make a pate, dont forget to add corriander first.Enjoy !!!
