Pasta Dough: 3 large eggs (I would imagine that egg substitutes could be used) 2 1/4 c. all purpose flour ***Variations: Red Pasta - For each egg, add 1 tsbp of tomato paste to the beaten eggs and mix well. (I would image you could also add finely chopped sundried tomatoes to this as well). Green Pasta - For each egg, use 4 oz fresh spinach or 2 1/2 oz of thawed frozen spinach. Cook in salted water, squeeze out excess water, and finely chop before using. Add to the egg mixture and mix well. Mixing the flour & eggs: 1. Pour the flour into a mound on a good working surface and make a well in the center with your fingers. 2. Break the eggs one by one into the well. 3. Beat the eggs gently with a fork until the yolks and whites are evenly mixed together. 4. With the fork, gradually incorporate the flour into the eggs until the eggs are no longer runny, taking care not to collapse the walls of the well too quickly. Kneading the dough: 1. This step must be done quickly and without hesitation or you mat end up losing some of the egg mixture. Using both hands, swiftly bring the remaining flour uver the egg mixture so that it is completely covered. 2. Begin working the mass with your hands until all of the flour is mixed in with the eggs. Decide whether you need more flour: the dough should feel moist but not sticky. When it is the right consistency, wrap it tightly in plastic wrap. 3. Scrape away any dough stuck on the work surface and wash your hands well. Unwrap the dough and begin kneading. 4. Use the heel of your palm to push the dough down and away from you. Rotate the dough a 1/4 turn & repart the process until the dough is uniform and very smooth.
