My husband and I were vegetarian for 5 or so years in the late 1990s, but then I found I required meat, so my diet shifted to include meat now-and-then. Lately, I've had less desire/need for meat, and have gotten interested in learning some new vegetarian recipes. So, here I am! I'm looking forward to reading the messages! Last night we made some delicious wraps: Roasted red pepper and garlic hummous (storebought) spread over 1/2 of a soft tortilla. Fill with veggies of your choosing (I used spinach, cucumber, avocado, tomato, garlic, purple cabbage and red onion). Wrap the tortilla around the filling (any surface of the tortilla with hummous on it will stick to other surfaces of the tortilla). I like the 'diaper wrap' fold technique the best: fold the bottom 1/4 of the tortilla up over the filling, then fold the left and right sides of the tortilla over the filling.
