Guest guest Posted November 28, 2004 Report Share Posted November 28, 2004 hi pt, when i worked in health food stores, i had several customers who had celiac disease (gluten intolerance). luckily, i kept a bunch of my notes from that period. modified food starch is one to watch out for. here are other terms to look for because the product might contain gluten: maltodextrin, malt, dextrin, starch, hydrolyzed vegetable protein (hvp), natural flavoring, fillers, soy sauce, food starch, wheat starch, vegetable starch, vegetable gum, flour, wheat, durum, semolina, tritcale, bulgur, spelt, wheat germ, wheat bran, rye, textured vegetable protein (tvp), hydrolyzed plant protein (hpp), oats, barley, grain vinegars, binders, and excipients. gluten can also be in gum, cooking sprays, tomato pastes and sauces, soy sauce, drink mixes, salad dressings, seasoning mixes, stocks, bouillon cubes, gravy mixes, flavored coffees and teas, some cheeses (blue), and vitamins. i would say that any food that is processed could have gluten in it, unless it specifically says " gluten-free " . that's probably not a complete list. but it gives you an idea. lately, i've been seeing more and more gluten-free products at grocery stores (esp. ones with a natural foods section). susie --- ~ PT ~ <patchouli_troll wrote: > Oh and you mentioned also about gluten being in > so many packages products, even broths. i will sure > have to check the labels very carefully then.
