Guest guest Posted November 25, 2004 Report Share Posted November 25, 2004 My favorite sandwich spread...The name baffles many. 1 lb. med or firm tofu-sliced and drained 2 Tablespoons finely chopped celery 1 Tablespoon finely chopped onion 1 Tablespoon plus one teaspoon vegan mayonaise 1 Tablespoon sweet pickle relish 2 teaspoons yellow mustard (I like more) 2 teaspoons dried parsley flakes 1 1/2 teaspoons sugar 1 teaspoon vinegar 1/2 teaspoon turmeric 1/8 teaspoon dried dill weed In a large bowl, crumble tofu with a fork. Mix in celery and onion. Place remaining ingredients in a small bowl and mix well. Add to tofu, mix well. I find this tastes best if you can let it chill for a few hours or overnight. Guest guest Posted November 26, 2004 Report Share Posted November 26, 2004 I made this today - and the only change was that I substituted coarsely chopped green olives for the relish (since we don't use therefore don't keep it handy) and a tad more onion. The extra onion wouldn't have been needed if I had taken your advice and not been greedy enough to eat it before it had time to sit a few hours, of course.
