.. Harvest Squash and Sweet Potato Soup - Recipe

Adapted from " Fresh from the Vegetarian Slow-Cooker, " by Robin

Robertson (Harvard Common Press, 2004).

 

This orange-golden soup is a great way to begin Thanksgiving dinner.

If you make it in a slow-cooker, it also frees up the already-

crowded stovetop and keeps the soup at the perfect temperature while

everyone gathers at the table.

 

Even if you don't use a slow-cooker, this mouth-watering soup--rich

with beta-carotenes and nourishment from tender winter squash and

sweet potato and enlivened with a little onion, thyme, and sage--is

simple to make and beautifully satisfying.

Butternut Ravioli with Hazelnuts and Parmesan - Recipe

Inspired by " Autumn: Williams-Sonoma Seasonal Celebration, " by

Joanne Weir (Time-Life Books, 1997).

 

When we found out how easy it is to make ravioli--and with such

completely impressive and delicious results!--Annie and Cait just

had to share this fabulous harvest recipe with you.

 

This dish is a poem to autumn, filled with sweet, tender butternut

squash combined with a touch of honey, fresh thyme, rosemary, sage,

and Parmesan, and topped with chopped hazelnuts (or you could

substitute walnuts) and brown butter. This would work beautifully

for any family feast or romantic, intimate dinner.

Cornbread-Stuffed Pumpkin with Greens and Walnuts - Recipe

In this luxurious vegetarian feast dish, a gorgeous orange pumpkin

overflows with golden cornbread stuffing lightly moistened with

broth and studded with healthful chopped greens and omega-3-rich

walnuts. So impressive and beautiful, it is sure to win gasps of

complex and delicious make it seem as though you slaved for hours.

 

Cooking with corn and pumpkin at this time of year becomes a timely

reminder of the Native American people; when we make this dish, we

Pumpkin Pecan Streusel Pie - Recipe

Common Press, 2003).

 

This lighter version of pumpkin pie has it all: it's a cinch to do,

it makes two pies or 2 dozen tartlets (so there will be plenty for

everyone), it has a crunchy pecan crust and creamy filling, and it's

topped with a glorious brown sugar, cinnamon, and pecan streusel

topping--an unusual and delicious take on the classic Thanksgiving

dessert.

 

We also include two other favorite pumpkin pie recipes, one for a

classic Best-Ever Pumpkin Pie, as well as a lower-calorie recipe

from the Canyon Ranch health spa (only 125 calories a slice!).
