It is a nice marinated vegetable salad recipe that i found by a person in Medford, Oregon; i just changed a few of the ingredients to suit my taste. Theirs had more sugar and included raisins instead of the sunflower kernels, and no garlic. *gasp* i have to have garlic. If you can't find sucanat, then you can substitute either regular brown sugar or even a bit of molasses. Enjoy. Snap Salad 2 medium cucumbers, halved and sliced 2 medium carrots, julienned 1/4 cup diced red onion 2 Tbs. sunflower kernels 3/4 cup water 1/4 cup red wine vinegar 1 tsp minced garlic 1 Tbs. sucanat [or brown sugar] 1/2 tsp salt 1/4 tsp. pepper 1/4 tsp paprika In a large bowl, combine cucumbers, carrots, onion and sunflower kernels. Combine remaining ingredients; pour over the cucumber mixture. Cover and refrigerate for at least 6 hours. Serve with a slotted spoon.
