I'm sorry;) The Horseradish mashed potatoes would be made in the same fashion that one would add roasted garlic to freshly mashed potatoes:) I like Yukon Gold potatoes - peel and boil in water until soft - then drain. Add margarine (I like Smart Balance), and if you prefer, a small amount of unflavored milk (any type - I love plain almond milk, unsweetend soy or rice is good, too - cow's milk if you're lacto:) and whip with an electric mixer until fluffy. I usually buy jarred horseradish, so I would simply add it to taste along with salt & freshly cracked pepper...go easy at first - horseradish is a powerful herb! If you're making this for a family gathering, sprinkle chives or chopped green onion tops over the dish before serving:) If you want to do roasted garlic, I roast the entire bulb, because I'm making enough to feed an army;) just slice the root end off of the bulb, exposing all of one end of each clove. Wrap in foil and roast in a 350 degree oven until the cloves become soft and brown...(probably 30-45 minutes) let it cool completely - these things hold heat!!! Then squeeze desired number of cloves into your freshly mashed potatoes, and whip through:) Thanks for the info on eggs & cheeses...I saw almond cheese, and wanted to try it, but it also contains cow's milk:( **sigh** I do want to try scrambled tofu, I saw a recipe online a few days ago that looked really good, but I didn't print it out - so, a surfing I will go!! The foule sounds wonderful too! Fake cheeses you can find in most health food stores. Some are better than others, many are not actually vegan (casein added). Egg sub is trickier. You can buy a box of a powdered additive for baking, but for other purposes it's not usually duplicated as such. I will say I've had great tofu scrambles, however, which you should try, and as often as not I've explored into just other things. I've had foule (beans, lemon juice, cilantro) for breakfast, as well as veggies and hash browns, good yummy stuff.
