Fake cheeses you can find in most health food stores. Some are better than others, many are not actually vegan (casein added). Egg sub is trickier. You can buy a box of a powdered additive for baking, but for other purposes it's not usually duplicated as such. I will say I've had great tofu scrambles, however, which you should try, and as often as not I've explored into just other things. I've had foule (beans, lemon juice, cilantro) for breakfast, as well as veggies and hash browns, good yummy stuff. Of course I cannot remember the authors names...but it was two women. the book is full of simple recipes and offers some great substititutions.
