Vegan dishes are the healthy alternative to a ovo lacto diet... BBQ Veggie Joes (Pillsbury) Categories : Beans/Legumes Electric Slow Cooker Sandwiches Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup dried lentils -- rinsed, sorted 2 cups water 1 1/2 cups chopped celery 1 1/2 cups chopped carrots 1 cup chopped onions 3/4 cup ketchup 2 tablespoons dark brown sugar 2 tablespoons worcestershire sauce 2 tablespoons cider vinegar 10 sesame seed buns -- split, toasted In medium saucepan, combine lentils and water. Bring to a boil. Reduce heat; cover and simmer 10 minutes. In 3 1/2 to 4-quart slow cooker, combine celery, carrots, onions, ketchup, brown sugar, Worcestershire sauce and lentils with water; mix well. Cover; cook on low setting for 10 to 12 hours. Just before serving, stir in vinegar. Spoon 1/2 cup filling into each toasted bun. 10 sandwiches Healthy Hint: Lentils are an inexpensive protein source; they are high in fiber, complex carbohydrates, and B vitamins. I try to avoid non-fermented soy products as much as possible, because soy is an anti-nutrient and blocks the absorbtion of nutrients. We have many vegans in our membership, and in our recipe files we have many tried and true vegan recipes that they have been kind enough to share with us. i am a lacto-ovo vegetarian that eats a mostly vegan diet, and many of the recipes i have shared in the past are vegan as well, but i do still share many lacto-ovo recipes. All of the vegan recipes should be labeled to make it easy for you to find in the files. Please keep in mind we are a diverse group with members of different vegetarian diets. There are quite a few strictly vegan recipes lists out there if diversity and sharing recipes with different types of vegetarians is not your cuppa tea.
